HOW???? Well I slowly incorporated these foods into our meal plans, I’m using seasonings they like, I’m pairing them up with foods they enjoy AND I’m eating them too!!! If you are not eating it why should they?? Are we setting an example to good food choices?? I will tell you I enjoy a box of brownies, twinkies, or even marshmallow Rice Krispies but in moderation! My veggies, fruits, grains, proteins, and dairy’s must outweigh these!!! GOALS!!! I want to help you make yummy foods that you love!!! Totally added this to my menu this week and oooohhhhh they are good.
Gluten free, Fresh Lemon, and just the right about of tart and sweet. It’s like Spring just jumped in my mouth!! Yall better watch out because with all the NEW Recipes Ill be baking up a storm!
Don’t forget to SAVE it for easier finding later!
-3/4 c pure maple syrup
-3/4 c pure lemon juice
-1/4 extra-virgin coconut oil
-2 Tbsp finely grated lemon peel
-2 tsp group flaxseed
-1 tsp pure vanilla extract
-3/4 xanthan gum
-1 1/2 cups GF flour blend (Bob’s Red Mill All Purpose baking Blend)
-1/2 cup almond flour
-2Tbsp poppy seeds
-1Tbsp baking powder
-3/4 tsp salt
1. Preheat oven to 350 F
2. Line twelve cup muffins with muffin liners ( I like my silicon ones from amazon)
3. Place maple syrup, lemon juice, oil, lemon peel, flaxseed, extract, and xanthin gum in blender: cover Blend until smooth. Set aside
4. Combine Flour, almond flour, poppy seeds, baking powder, and salt in a medium mixing bowl; mix well.
5. Add flour mixture to blender. blend just until incorporated.
6. Evenly divided batter between prepared muffin cups. fill 3/4 way full.
7. Bake 18 to 22 minutes, rotate pan or until toothpick center comes clean.
8. allow to cool 5-10 minutes before removing muffins from muffin pan. Cool on rack.
1 Muffin = 1 Yellow 1/2 orange 1 tsp

Smoothies are an amazing way to get in a lot of good nutrients and they are so quick and easy they make for a great on the go breakfast, especially when you are a busy mom.
They are also a great way to hide veggies if you have picky children. You can add all kinds of good veggies and they won't even know they are in there.
Avacados, kale, spinach and zucchini are some great veggies that will go well with your fruit smoothie.

One of my favorite tricks to do is too cook my quinoa in bone broth. The quinoa absorbs all the healthy broth making it a powerhouse of protein, gut health, and immunity minerals! My kids ate quinoa. I repeat: my kids ate quinoa. And willingly! I was inspired by the corn+quinoa at Flower Child and made a bake of my own, mixing onion, corn, tri-color quinoa, plain greek yogurt, parmesan and added some crumbled sausage from the farmer’s market. THEY ARE ASKING FOR MORE. So thankful to find new foods they love!
