"I used the Forkish wholemeal biga recipe but without scales, and not recalling that Australian cups are bigger than American cups until midway through mixing it (and then hastily adding some extra water), and with a weird mix of bread flours. Australian supermarkets don't seem to carry bread flour as a standalone item! It was all a bit of a guessing game - then I decided to rise them in the tins (no bannetons) and had a tray of water in the base of the oven because no dutch oven. But, in the timeless tradition of pro-masterchef, i used my 'cheffy instincts'. or possibly my 'baker-y' instincts"
