This is AM, the coffee I drink most. Made for more than just one purpose. We rarely think of a coffee as being just for espresso, or just drip, and when we are deciding how to roast a coffee, and later blend it (or not) we test it in multiple brew methods. A good coffee should taste good across the brewing spectrum. Some have different methods that highlight different components, but they should still be reliable and good no matter how you brew.
The first blend we ever created is AM. And it still holds our heart.
AM is like a sunrise. It has loftier notes that counter the bass tones, but not overwhelming, its acidity, like its mood, is mellow and soft like morning ears, still waking up, the sun crests the hills. Its midrange is rich, with a solid tempo. Each coffee component has its own role, its own characteristics, where it was grown, who grew it, how it was processed, and how it was uniquely roasted before joining the song. Like any great collaboration, the end result is greater than the sum of its parts. And these parts, in the case of AM blend, are moments from around the globe. And its rich texture shows it. Each cup holds the labor of love of a hundred hands. A cup of AM is so much more than just a cup of coffee. It has been raised as a seedling by caretakers who start their crops in nurseries under shade. They have been planted on mountainsides and tended for years before they provide fruit. Each cherry has been hand-picked. Fermented and processes in a laborious way that only happens with human hands and work. Then transport, often with incredible difficulty through extremely arduous roads before it hits the ocean. When the crops finally converge we experiment & work to find their best flavors and roast each crop separately to highlight as such. All for seeds, for a cup. But so much more than just a cup, a good cup of coffee can redirect the day of the one drinking it.
And here the beauty, in the simplicity of coffee, when sitting with our cup, steam rising into our senses. A roasted seed, crushed and applied with hot water, then we sip. It is one of the purest, simple pleasures on earth. And one we get to enjoy like a sunrise, every day. This is AM.
