Pomegranate Salsa Recipe: (makes 4 servings) Ingredients: 1 seeds of large fresh pomegranate (also called arils) 2 large Roma tomatoes, seeded and chopped 1 small red onion, diced 2 seeded jalapeños, finely diced 1/2 cup chopped fresh cilantro or parsley leaves juice of one fresh squeezed lime sea salt and ground pepper, to taste, about 1/4 teaspoon each Instructions: Add all ingredients to a medium/large serving bowl and toss gently until well combined. Way overripe bananas make the perfect pancakes using @kodiakcakes chocolate chip 🥞mix. It was the best combo and Drew must have thought so because he had ✌🏻cakes! . Goji Berry Bread with Cashew Buttercream Frosting Ingredients: 4 cups all-purpose flour, plus little more for kneading. 6 tablespoons maple syrup 1 teaspoon baking soda 1 1/2 teaspoons kosher salt 4 tablespoons (1/2 stick) cold vegan butter cut in small pieces. 1 3/4 cups soy milk mixed with 1 tsp of apple cider vinegar and 1 tsp of flax meal (vegan buttermilk) 1 teaspoon grated orange zest 1/2 cup Goji Berries. I used @suncorefoods brand. Directions Preheat the oven to 375 degrees F. Line 2 loaf pans with parchment paper. Combine the flour, baking soda, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour. With a fork, beat the vegan buttermilk, maple syrup and orange zest together then slowly add the buttermilk mixture to the flour mixture. Add the Goji Berries. Dump the dough onto a well-floured board and knead it a few times into 2 loafs. Place the loaf on the prepared pans. Bake for 45 to 55 minutes until top is golden brown. Cool on a baking rack. Serve with cashew buttercream frosting. Cashew buttercream frosting 1 cup raw cashews (soaked overnight) 1/3 cup full-fat coconut cream 3 Tbsp maple syrup 1/4 cup melted coconut oil 1 tsp pure vanilla extract Method: Drain cashews and pat dry them.
