Air fried chicken tenders and creamed spinach which was super easy! Recipe below
Sauté half an onion and a clove of garlic in one tablespoon of oil
Add one bag of spinach (227g) 3-4 handfuls at a time
After wilted, add 56g of mozzarella cheese and turn off heat
Stir in 130g nonfat plain Greek yogurt, salt and pepper, fresh lemon if you want 😋

!! We got a HUGE prime rib that was so tender and juicy with the absolute CREAMIEST mashed potatoes and creamer spinach 🤤 the best part was the roasted WHOLE pieces of garlic 😍 I’m drooling as I type this. The pasta was also good but nothing compared to their prime ribs 😋 worth every penny
What the hell kind of concoction did I whip up for dinner?
We shall soon see and I’ll be just as surprised as you. I had leftover grilled chicken, creamed spinach, and spicy bolognese sauce. So I mixed it all together with some lasagna noodles, mozzarella and parm to make a version of creamy chicken arrabiata bolognese lasagna. Not sure if it’s really a thing, but if it’s good, it will be!

For the chicken:
3 large chicken breasts
2 roma tomatoes
Season both sides of the chicken liberally and allow it to sit for 30 minutes. In a cast iron (or other heavy bottom pan) melt the butter over medium-high to high heat. Sear the chicken for 4 minutes per side. Set aside and allow it to cool for a few minutes. Make cuts every quarter to half inch almost all the way through and stuff it with half a slice of tomato.
For the spinach:
10 c fresh spinach (packed down cups)
1/4 c heavy whipping cream
2 oz cream cheese
1 c shredded gouda
1/2 c each chopped white onion and orange bell pepper (any color pepper will work really)
6 cloves of garlic, minced
1/2 tsp each garlic powder and paprika
1/4 tsp crushed red pepper flakes
1 pinch of nutmeg
Salt and pepper to taste
In the pan the chicken came out of add another pat of butter and saute the onion and bell pepper for 6-8 minutes. Add in the minced garlic and cook another 2 minutes. Mix in the cream cheese and stir until smooth. Add in the spinach a handful at a time to allow it to wilt. Lastly, incorporate the heavy whipping cream, gouda, and dry spices.
Nestle the chicken into the spinach mixture and bake at 350° for 30 minutes, or until the chicken reaches an internal temperature of 165°.
