@simpletruth4u Cornish Game Hens for dinner last night! Marinated over night in Dellah Cuban Mojo. Mine were a little frozen so I just let them thaw out in the marinade. Preheat oven to 450. Pull your birds out and place on cooling rack in roasting pan. Cook for 20 min then drop temperature to 350 and cook for another 40 minutes. Continue cooking until the fattiest part gets to 165 F. Baste occasionally with pan juices. Once done let sit for 10 minutes before serving. Serve with your favorite veggies or I did black rice!

Halloumi with Tomatoes, Mint and Pomegranate ♥️ ——————————— 1-2 Tbsp Olive Oil 1/2 Tsp za’atar 225g Pack of Halloumi 5 Cherry Tomatoes (halved) . . Chopped Mint and pomegranate seeds to serve ... sprinkled over. . . Mix the oil and the za’atar in a bowl ☀️(this is also a gorgeous dip served with warm wholemeal pita bread FYI) Slice the halloumi and coat in the oil mixture, then fry in a griddle pan for 1-2 mins each side, add in the tomatoes and cook all over. Transfer to a plate and scatter with the mint 🌱 and pomegranate seeds. It takes minutes to make and it’s DELICIOUS. . . Halloumi, great source of protein but it is a little high in fat and salt so limit how much you eat !!!! Xx . . I did this as a side to have with lemon baked salmon, sweet potato fries, broccoli, hard boiled eggs and some guacamole and hummus. Whenever I boil eggs i do lots as they are great to snack on the next day or two with some spinach, I did extra salmon too and this was my breakfast !! .. the kids love them too and eggs are an absolute powerhouse of goodness. That’s a whole other post ... this would be a great side for any BBQ meal. We all love a pick at different bits here and I find the kids always eat more that way. . .
