The BBQ of Gods: made a vegan BBQ for one this evening, and all homemade. The vegan burger patties were made from my own recipe of pistachio quinoa, coconut and beetroot, mixed with mashed black chickpeas, portobello mushrooms glazed in soy sauce, sweet bbq sauce and paprika, baked then finely chopped, and a mix of grated carrot, red and white cabbage, and more beetroot, all mashed together, cooked and served in a scrummy @geniusglutenfree
For sides, I smothered a corn cob with @Jamie
Olive’s tasty pea and mint pesto, I made my own feta and basil pesto to dunk some lentil tortilla chips in, homemade courgette fries seasoned with oregano and black pepper, and a homemade side salad of chopped cucumber, cool mint, samphire and sun-dried tomato - all washed down with my new inventory drink of iced watermelon and mint mocktail.
