This is last nights curry vege stirfry made up of kumara, parsnip, leek, brocolli, cabbage.
To change it up for lunch today I had it cold and added some goat feta, hemp seeds, sesame seeds, chickpeas, sauerkraut, and an egg to up the protein.
Such an amazing dish in 2 totally different ways. This is how I love to make my leftovers last a bit longer and it keeps things exciting for my taste buds👌
