A whole food plant based diet has been proved by countless studies to decrease Blood Pressure, LDL cholesterol and blood sugar. Doctors ( nutrition.org, PCRM) keep telling us, keep proving to us that fruits, vegetables and real whole food is the best for our health yet we continue to eat highly processed food, animal dead flesh and drink animal secretions that are not meant for us! .

Even if animal products have a tiny portion of benefits, these benefits are outweighed by the numerous information regarding their health hazards.
Yet we still consume massive amounts of animal products....
We know it’s killing us yet we turn a blind eye.
Processed meat has been classified as group 1 carcinogenic yet we still consume them and feed our children.
Red meat, pork, chicken are known to lead to clogged arteries, stroke, heart attack and we still continue consuming them.
In this very connected world where information is wildly available we can no longer ignore the facts. .

H A B I T S when it comes to lunch. I whip out my skills for dinner usually and keep it fairly simple during the day. Ya girl isn’t about washing dishes twice! And, because this plate is only 330 calories, I have more to spend on delicious dinners. Hey, it works for me! A turkey and veggie wrap with laughing cow cheese, mustard, and a hint of Italian dressing, rolled around a multigrain wrap, with a side of carrots and red pepper hummus, and a nice juicy pickle, my favorite!

MEXI-CAULI TACOS 🌮
Makes approx 12 tacos
INGREDIENTS FOR MUSHROOM-CAULIFLOWER TACO MEAT:
2 lbs Mushrooms, finely diced
1 head Cauliflower riced
8 tsp Cumin
4 tsp Coriander
4 tsp Chili powder
1/8 tsp Cayenne
8 tbsp Coconut Aminos
INGREDIENTS FOR SALSA:
2 pints Cherry Tomatoes, chopped
1/4 Red Onion, finely diced
1 Jalepeño, finely diced
2 cloves Garlic, minced
1/2 bunch Cilantro finely chopped
1/2 Lime juiced
INGREDIENTS FOR TACO SHELL:
1 head Romaine, washed and leaves kept whole
1. Break cauliflower into florets and process in blender or food processor adding just a few florets at a time (4- 6 florets depending on size) until it becomes a rice like consistency. Remove from blender and place cauliflower rice in a large mixing bowl. Repeat until all florets have been blended and placed in bowl.
2. Add seasoning, cumin through coconut aminos, to cauliflower rice and toss to integrate well.
3. Dehydrate cauliflower rice at 125° for 3 hours.
4. While mushroom-cauliflower meat is dehydrating, combine all 6 salsa ingredients and toss to combine well.
5. To assemble tacos, place mushroom meat in center of each lettuce shell and top with salsa. Enjoy!
