Almonds are an amazing and delicious nut, but are best when sprouted. The body does not absorb all nutrients in almonds. This is because almonds contain enzymes that slow digestion and inhibit nutrient absorption.
Sprouting stimulates the seed to multiply its nutrients in preparation to become a plant. It removes enzyme inhibitors allowing the seed to germinate. During this, all stored nutrients begin to break down into simpler components. Proteins and starches break down and multiply, making sprouts nutrient-rich foods.
