Do you think courgettes are boring? Maybe yes, if just boiled. But if you are a bit creative they can surprise you. Here they are made in two different ways: grated and cooked ready for the pasta to mix and cut in little squares and stir-fried, both with extravirgin olive oil and salt.
Tortiglioni pasta or penne are perfect because all the sauce can go inside for you to enjoy at every bite.
If you like fish, you can add Bottarga as we did but it is also lovely with little prawns or as it is for a vegan choice.
