Langoustine or Norwegian Lobster is a gastronomic delicacy.
A tricky crustacean to cook (much like most shellfish), the sweet meat of which is lost if frozen.
Its also much less in demand and a lesser-known seafood making it a sustainable protein.

whose new seafood menu launches in a few.
It's good to 'sea' new food been used, especially when it comes to sourcing locally and using ingredients which are fresh, new and delicious.
