cake for lunch, washed down with a glass of cold coconut 🌴 milk?
It has the texture of a cake/ loaf and a is fabulous way of getting wholesome nutrition down the whole family.
My 10 year old helped me make this today and it was a great Sunday activity to do together. ▶️Recipe
Put the oven on gas mark 6.
In a large bowl mix together (avec the help of a wooden spoon) 100g organic rye Rye flour (*High in gliadin low in glutenin flour), 80g organic spelt flour,
170 unsalted butter, 2 huge tablespoons of coconut oil, teaspoon of baking powder, pinch of sea salt, 1/2 teaspoon of cinnamon, 85g dark muscovado sugar and 85g light muscovado, 2 heaped teaspoons of matcha.
Beat 4 free range eggs and slowly add whilst mixing.
If the consistency is a little dry, add a few tablespoons of coconut milk (We use the drinkable Koko range)
Pour the mixture into a cake tin and place on the middle shelf for around 30mins.
Once the cake has risen Lower the oven temperature to around gas mark 3 and leave for a further 30 minutes.
Test: using a sharp knife, slice into the cake, if there’s still mixture on the knife place back in for a little longer.
