Wrapnesday! . . Hari ini ngewrap pakai rice paper si kulit lumpia Vietnam (lagi). Kali ini diisi dengan telur yg dimasak pakai cilantro si daun ketumbar, dicampur sayur mentah juga jadi kress seger dan sekali gigit semua masuk. #strategi hahahaha.. . . Egg + Cilantro wrap in Rice Paper . 10butir telur ayam (aku pakai telur ayam omega 3) 2 buah wortel, potong kecil2 (aku kuparut) 100gr tomat chery, belah jadi 4 Segenggam penuh daun ketumbar 1 ruas jari jahe, parut halus 2 sdt kecap asin 4 sdt minyak wijen 1 sdt cuka apel Wijen hitam untuk taburan Himalayan salt Minyak kelapa untuk menumis . Masak orak arik telur, sisihkan. Panasnya sedikit minyak kelapa, masukkan jahe, tumis sebentar. Masukkan wortel masak hingga agak layu. Campur dengan kecap asin dan cuka apel. Setelah rata, masukkan tomat dan telur, masak sebentar. Terakhir masukkan minyak wijen dan himalayan salt sesuai selera sesaat sebelum api dimatikan. Tunggu agak dingin, campur dengan daun ketumbar yg diiris halus dan taburi dengan wijen hitam. . Siapkan rice paper (rendam dengan air matang sebentar, letakka pada alas yg lebar) Tabur sedikit wijen hitam di seluruh bagian rice paper. Letakkan sayuran mentah (selada, romain lettuce dan butterhead yg diiris kasar) di bagian tengah, tumpuk dengan olahan telur kemudian gulu rice paper sesuai selera. . . Mashed sweet potatoes . Ubi ungu Ubi putih Ubi cilembu . Kupas potong dan cuci hingga bersih. Keringkan kemudian balur dengan sedikit minyak kelapa dan taburkan sedikit himalayan salt. Really quick & easy low carb 5-a-day vegetarian lasagne 😋 I actually forgot to get something for the white sauce filling but I would probably use a layer of Philadelphia for something quick or blended cashew nuts,milk garlic, Nutritonal yeast if I was spending more time on it. Took 20 mins to make & I had leftovers the day after which lasted well so would be handy for lunches. Have with a big salad on the side & some coleslaw 😍 I winged it on measurements, but what was used was: ☀️ 3 medium aubergines- sliced, sprinkled with basil, salt, frozen garlic & put in the oven for 10 mins - I prefer them crispy then soft. ☀️ Use whatever veg you want, I chopped 4 carrots, 1 pepper, red onion, celery - fry in a pot with garlic, smoked paprika, salt, mixed Italian herbs ☀️ Add a tin of chickpeas and 200g lentils ☀️ Add 1 jar of pasata + 1 beef stock (ok maybe it's not vegetarian 😂 used veg stock if you prefer) and 500ml water ☀️ Let simmer for as long as you want, it cook so quick but always tastes nicer the longer you leave it as long as possible on low ☀️ Remove the aubergine from the oven and layer them with the veg mix in an oven dish ☀️ Spread on some cheese ( as you can see from pics I had about 20g of cheese left in a bag 😂 but wpuld have used way more if i had it. Seriously, with EVERY meal. • Go fishing (I caught my first when I was 8 years old) • Have 3 eggs per day (2 in the morning, 1 for dinner) • Not consider it as a meal if it didn’t have fish or meat in it You know how people tell you “I don’t eat much meat anyway...”. This version starts with an organic crust, soy chorizo from @traderjoes , a super robust marinara sauce and meaty portabello mushroom slices and a little chiffonade of basil because everything is better with basil🍕 . . 💥Now, here's the deal. I love a good salad with my pizza, and have found that piling it nice and high on top of a slice makes all the sense in the world and makes me extremely happy, especially when its baby kale or arugula. So that's what I did in the second pic if you swipe right. Just wash those babies well with eatCleaner first to get rid of the muck water can't, then toss your greens with a delish olive oil - this new one I picked up from @olivepressca is so flavorful and legit - a dash of good balsamic and some crushed red pepper and a pinch of Himalayan pink salt. Then, you have everything you need in a bite - bitter, umami and sour flavors with a dash of heat. That is the answer to life right there. . . Who's down with the 'za and would you go plant-based? Let cool down completely.⠀ 3. Place spinach in a food processor and process until creamy. Add in little by little flour and splash of water and process until the dough sticks together. ⠀ 4. Cover the dough and let rest for 30 minutes.⠀ 5. for the filling, place the nuts in a bowl and cover with boiling water. Set aside for 30 minutes. ⠀ 6. Rinse the nuts and Place them in a food-processor. Add in a splash of water, truffle oil, salt and nutritional yeast and process until perfectly creamy. cover and set aside.⠀ 7. Using a pasta machine roll out the dough until it’s about 2 Millimeters thick. 8. Press a glass into the ravioli sheet and set the ravioli circles over a floured surface.⠀ 9. Each raviolo is made of 2 circles; put 1 tsp of truffle cream in the middle of a circle, moisten the edges of the dough with a pastry brush and cover with another circle. ⠀ 10. Press the edges with a fork so that it wont open while boiling.⠀ 11. if you want them to be a little “al dente” let them dry out overnight on a floured surface.⠀ 12. When I first witnessed this sight, it shocked me so much that I genuinely felt like I was looking at dead human bodies. There’s something so chilling about the look in their vacant eyes rolled back in their skulls. And the way their fur looks so clean and healthy, as if they had dropped dead just moments ago. And the farmer had the audacity to preach to us about animal welfare after seeing this. . These calves are baby boys, separated from their mothers’ at birth and sent to a veal farm to be fattened up for a while before being sent off for murder. Male calves are considered worthless to the dairy industry since they can’t be exploited for milk, so we take whatever we can get from them instead, their tender baby flesh. . This is where your money goes when you buy cheese, milk, butter, yoghurt or ice cream. How could anyone chose a block of cheese or a dash of milk over the lives of these innocent babies? Finally had some fresh veggies ready for harvesting in the garden and I was so excited 👩🏼‍🌾 Fresh Tofu Veggie Rice Paper Rolls with Peanut Sauce: Thin Vermicelli, Tofu, Dinosaur Kale 🦕, Shredded Beets (@rootsdownorganic CSA), Heirloom Carrots, Green Pepper, @burts_greenhouses Shoots, Bok Choy & Cilantro.
Southwest Tofu Scramble 🤠 • Plant based Oil free Salt free (besides natural sodium) & easy as pie ;) • 16 oz xtra firm tofu 1/2 an onion (sliced) Handfuls kale and/or spinach Handfuls baby potatoes (chunked..? if that’s a term) Spoonfuls minced garlic tsp garlic powder tsp cumin powder 1/2 tsp chili powder For serving: ⁃salsa ⁃tortillas ⁃hot sauce • 1. Roll tofu into a clean hand towel & place something heavy on top (ex: a pan) for 15 min 2. Saute potatoes, onion, and minced garlic in skillet over medium heat until potatoes are soft (~20 min) - SUB WATER FOR OIL by adding a tbsp or two of water at a time, let it sizzle and evaporate, add more water, repeat 3. While potatoes are cooking make the sauce by combining garlic, cumin, chili powder & use water to create a runny sauce - SET ASIDE for later 4. The last 5 minutes of cooking the potatoes, add handfuls of kale and/or spinach to the mixture (and a little water on top) 5. Unwrap tofu and crumble with a fork into little pieces 6. Saute tofu in separate skillet for 2 minutes, add sauce, cook for 5-7 more min 7. Take skillets off heat and combine the tofu & potatoes into the bigger skillet of the two, mix together 8.
