PLANT-BASED FOR BEGINNERS, Day 15: Legumes! (What are legumes?!) Legumes include beans, peas, chickpeas, lentils, carob, soybeans and peanuts. You can find out exactly what a legume is on Wikipedia but what’s more important is how very good for you they are. My hero, Dr. Michael Greger, suggests we should eat legumes at EVERY MEAL! They are good for your heart, blood pressure, cancer prevention, weight control, blood sugar, depression, cholesterol...the list goes on. Breakfast ideas: baked beans on wholegrain toast (check that the beans you’re using aren’t full of added sugar/salt...if you can, make your own!) Lunch: take the meat off your salad and add a small tin of drained mixed beans or chickpeas. Dinner: lentil curry or bolognese, aloo matar (potato and pea curry) or make some vegan nuggets using chickpeas. TODAY’S TASK: plan one day’s meals, trying to include legumes in every meal. Threw together this delicious and easy dinner bowl. Tempeh, carrots, pepper, onion, garlic, cauliflower rice, slivered toasted almonds and garbanzo beans! Flavored with madras curry powder and topped with an easy vegan yogurt (vegan cream cheese, apple cider vinegar and a tad bit of unsweetened creamer).
