Vic's Berry Rice Swirl Cake #glutenfree
This tastes just like a #traditional
old fashioned rice pudding. Encased in a crispy crust, swirled with strawberry jam. My recipe is not too sweet, enjoyable
to eat, total comfort food without the guilt.
Perfect as a dessert, breakfast, snack. I enjoyed mine for afternoon tea with a cuppa ☕

What you need 👇
One can of chickpeas drained and thoroughly rinsed.
A whole packet of 90 second white rice.
2 tbsp vanilla essence.
⅓ cup of sugar substitute. I used @sukrinaus
gold brown sugar. Use what you have.
1 cup of frozen (or fresh) strawberries defrosted, mashed. Save some slices for the top.
You can use any fruit what ever takes your fancy.
½ tsp Cinnamon.
½ tsp nutmeg.
What to do 👇
Preheat the oven to 180° fan. I make this in a silicone loaf pan.
Process the chickpeas, eggs, essence and sugar until smooth and creamy. Taste the batter, add more sugar (or SF maple syrup) if you like it sweeter. You should not be able to taste the chickpeas.
Microwave the rice following the cooking instructions. Empty into a large bowl, breaking up any clumps with a fork.
Add the chickpea batter and mix until fully combined.
Pour half the mixture into the pan. Spread with the mashed strawberries. Add the remaining mixture.
Decorate with sliced strawberries.
Sprinkle with a little extra sugar. Bake at 180° fan for 45-55 minutes.
Dust with cinnamon and nutmeg (optional)
Serve straight from the oven while still warm. Or after completely cooled, slice into 6.
Maybe serve with a splash of cream 😇
