This might just look like your regular avocado toast. But to me, this looks like freedom.
I have followed IIFYM for years. As a vegan, this is more difficult as your protein sources are also your carb and fat sources. This means I never had carbs and fats to spare for avocado toast, bananas, or the things I really wanted to eat. Especially when cutting weight. Instead I would force myself to eat fake meat that I didn’t even want just to hit that protein number.
I have decided to try out an intuitive (more so but not fully-) Whole Foods vegan diet and stop worrying so much about hitting macros. This is definitely going to take some getting used to but I’m pretty excited for all of the new things I’ll be able to make and hopefully experience some extra energy from the Whole Foods🤗
One of my New Year’s resolutions was to eat more salads. GOOD SALADS. I wanted to get more creative combining flavors while incorporating grains and proteins. Tonight’s salad fit the bill. 🌱
I bought a regular sized bag of basic baby spring greens and combined it with the same size bag of iceberg with radish slices and carrot slivers. I added some shredded green cabbage and more carrots. I keep it in my fridge for my salad base. 🌱
Tonight I sliced up some colorful grape tomatoes, seedless cucumber, marinated artichoke heart, and some sliced green olives with pimento. For grains and protein I took some barley and lentils tossed with extra virgin olive oil, lemon juice and traditional Greek seasonings. (Such a delicious flavor combo!) I used poppy seed dressing and had a little dollop of hummus and whole grain crackers. 😋🌱
I LOVED THIS SALAD! The only flavors I felt were missing were perhaps some pumpkin seeds and some fruit - mango or papaya- or maybe a nice big spoonful of pomegranate seeds to garnish the lentils and barley. It had a nice Mediterranean flare to it so that would have been perfect. 🌱🌱🌱🌱🌱🌱🌱🌱🌱🌱
