Day 1: Back in April, my most favorite culinary team curated an incredible event called Skin Contact: a 3-day natural wine pop-up event by @sethbrammer , Chef @jsutcliff , @booyavino , and owner of @barandgardendallas , Julie! There are over a dozen natural wine to try. I naturally trick myself into believing natural has less alcohol ... when it doesn’t but I really do enjoy natural wines. They are often more aromatically thrilling to me and shows beautiful delicacy and poise. And the color! Looks like incredible juices ☺️ I told Jeffrey, “I can only handle one glass, so I trust whatever you pick.” If only there was a term like omakase for wine ... wow! The glass of SP68 Bianco Arianna Occhipinti 2017 was excellent! There were aromas of fruit and citrus and just nice fresh direct taste. But who are we kidding, I am really here to eat! Ordered all the small plates include a salad made of Profound greens and a nice strawberry vinaigrette and sprinkled with korean chili flakes, grilled chicken thighs with the most perfect crisp skin, both mushrooms - one filled with a mushroom duxelle and the other with chicken-liver mousse laced with crispy chicken skin. Soooo good and made me so happy that there are passionate people like Seth and Josh who are amazing at curating these types of events and experiences for us! They honestly knows the best of the best in this industry and have partnerships with farmers like Profound Microfarms for the salad, Cartermere Farms for the chicken, and Texas Fungus for the amazing mushrooms.
