I feel like it’s been a while since I’ve been in the kitchen! But I made a pumpkin soup tonight and it was bomb. I love a good soup. Pumpkin definitely being a top favourite! Super easy to make 👍🏽 Save for later if you need, let me know if you make it!
1/2 Large pumpkin, 1 medium pumpkin.
3 celery sticks
1 medium onion
2 garlic cloves (I used Byron bay garlic)
Coconut cream 🥥
Salt & pepper.
Roast whole pumpkin until soft to poke. Sautée onion, garlic, leek, celery, potatoes until fragrant, add in stock let boil then add into roasted pumpkin aswell to let soak up all the goodness. Leave for about 20 mins stirring occasionally. Sprinkle abit of tumeric and paprika (didn’t measure not a lot though) mix through. When done add to mixer & blend! Add coconut cream 1/2 can or (however much you want). Salt and pepper to season 🙌🏼❄️
