Morning beautiful people, many of us like a good pesto with pasta. How about a cheese free pesto with very little olive oil, with more healthy seeds than saturated fats. The seeds replaces the added cheese you would normally find in traditional Pesto. Here I have from Brinda's MauritiusDelights kitchen a quick healthy pesto as displayed here with all the ingredients. My "Vegan Pesto"
All you need: - Handful wild garlic - including the stalk & flowers
• Handful fresh coriander including stalks
• Juice of half lemon
• Pumpkin seeds
• Sunflower seeds
• Little olive oil to bind
• Salt & freshly ground black pepper
Blitz everything in a blender, season as per own taste. Squeeze lemon and oil to bind all the ingredients.
Serving Suggestions: - This paste makes a very healthy dip with pitta bread. - Cooking paste with pasta
- Spread on pizza
